How should I store my oysters?

Queensland Oyster Co oysters are harvested straight from the farm within hours of delivery and will stay fresh for up to 7 days before being shucked.

To ensure they stay as fresh as possible, we recommend storing your QOCo oysters in a cool, dry place until you’re ready to shuck. The perfect storage solution is a wine fridge at 12-15 degrees celsius. However, if you don't have one handy, any cool place where the temperature doesn't fluctuate too much will be fine. Once shucked, consume within 24 hours.

When will my order arrive?

We always aim to deliver on your chosen date. However, due to harvesting schedules we can't always guarantee this and it may be necessary to schedule delivery 24 to 48 hours prior to your chosen delivery date. But don't worry, un-shucked oysters stay fresh for up to 7 days if kept in a cool, dry environment.

We will contact you in advance to advise of any changes to delivery schedules and to arrange a suitable time/place.

Is oyster farming sustainable?

Oyster farming benefits biodiversity in a number of ways and there are a number of ecological benefits too. According to National Geographic (Fiorento, A., 2021) the “growing process uses almost no greenhouse gas emissions, water, feed, fertilizer, or food”. 

Larvae from certain farmed oysters, called diploids, escape from cages to seed the wild oyster population on their own.

Oysters can filter 50 gallons of water a day from pollutants such as nitrogen, a result of agricultural runoff and climate change.
